Soak the pistachio overnight, drain it the next day, add some salt to your liking, and pour it into a bowl, stirring constantly with very gentle heat until the water dries, then if you want it to turn a little red, It tastes sour. At this stage, you need to add some lemon juice or vinegar to the saffron and pour it into the container containing the pistachios and continue to stir, and if you see a little moisture while testing, pour it in a tray and leave it somewhere to dry.

Prepare salt water. Put the pan on medium heat, when it is hot, add the pistachios and stir with a spoon until the color of the pistachios darkens a little, then remove from the heat, wait a few seconds, then carefully pour the salt water over it and again. Put on the heat, stirring constantly to remove the moisture and whiten the pistachios and the dish. Continue to stir for a few minutes, then remove from the heat, pour into a tray and wait at least a day or two for it to dry completely and be ready for use.

For salting, the pistachio should be poured into a frying pan and stirred on a gentle heat until the color of the pistachio darkens a little, and this stirring should be such that the pistachio does not see more heat in one part and does not burn. After you feel that the smell and taste have changed, you should pour some salt water on it, and if you wish, you can add a teaspoon of lemon juice or vinegar and a little saffron to this solution, and pour it into the pistachio frying pan and continue stirring. Until completely dry. If, as in the first method, moisture is felt in the salted roasted pistachios, it should be poured into a container after heating and allowed to dry in the open air.

First, wash the pistachios, then add some salt water, some juice and saffron, and a medium glass of water, and add the washed pistachios for one night. The next day, pour the pistachio into a strainer, then pour it into the oven tray and put it in the oven, and then stir it several times to dry it with a gentle oven temperature of 250 degrees for 20 minutes.
